Garlic Shrimp With Veggies Recipe
This flavorful dish features shrimp, asparagus, and zucchini. Shrimp has selenium, iodine, antioxidants, and is a great source of lean protein. The asparagus provides adequate levels of vitamin A, C, E, K, and fiber. I hope you aren’t wearing socks right now because this dish will knock your socks right off.
1 lb shrimp peeled without tail
2 cups asparagus, chopped (220 grams)
2 zucchini, chopped (225 grams)
2/3 cup Wild Rice Blend (cooked)
1/4 cup fresh parsley chopped
1 1/2 tbsp butter
1/2 tbsp olive oil
4 cups of whole wheat pasta
1 lemon, juiced
2/3 cup dry white wine
4 garlic cloves minced
1/2 tbsp cornstarch
1/4 tsp red pepper flakes
Salt and pepper to taste
1. Add zucchini and asparagus to a microwave-safe dish. Afterwards you will cover with a damp paper towel and microwave for 3 minutes. Put in refrigerator.
2. Heat the olive oil in a pan over medium-high heat. Add shrimp in a single layer and cook on one side, without moving shrimp, for 2-3 minutes.
3. Flip shrimp and then add sauce. Finish cooking shrimp most of the way then add butter and parsley.
4. Remove shrimp from heat and toss in asparagus and zucchini. Serve with cooked wild rice and pasta blend.
